Cabo Vacation - Part One

We recently returned from a week in Cabo San Lucas.  It was great to escape a week of winter and decompress, just the two of us.  We stayed at the Villa del Arco which was a relaxing, beautiful resort on Medano Beach.

Cabo is a popular timeshare spot, but once we told the resort that we weren't interested, we were left alone. We went the all-inclusive route, even though all-inclusive isn't very popular in Cabo because there are so many places to eat or just to buy food to make in your room. It was nice because breakfast was a buffet, but all other meals you would order off the menu, therefore the food was fresher. I did miss wandering in and out of the dining room throughout the day for chips and salsa anytime I wanted though.

Here are some pics of our resort taken from our balcony.

I learned Instagram the night before leaving so had some fun playing with it.

The standing boat in the resort that you could eat/drink on.

Out of the other areas that we have been to in Mexico, we both agreed that Cabo would be the place to return to. It is definitely more developed and I felt very safe outside of the resort.  Plus, there is plenty to do in the city, so your not at your resort all day every day.  We were just a 10-15 minute walk to downtown and the marina.

We went out for dinner three nights.  One night we went to Hacienda Cocina y Cantina which came recommended by friends Ali & Jason who like to travel.  In fact, they have given us recommendations for three of our trips by now.  You could probably say that we follow them in our traveling adventures.

This beachfront restaurant was in the Hacienda Beachclub & Residences.  I would love to stay here next time if we are able to as it was right by the marina.  We ate dinner as the sun was going down and even saw the couple at the table next to us get engaged on the beach.  I heard the guy get up and tell his girlfriend he wanted to go to the beach to see the sunset and I remember thinking 'I wonder if he is going to propose', but didn't say anything.  I peeked at the beach a few moments later and saw the guy on his knee and then gasped to the family waiting at the table that I thought he was going to propose.  Chris then said he thought the same thing.  Lol.  It was fun to share in the family's joy of the engagement and they thanked us for being so fun with it.

Pepino Mojito - Cucumber muddled with rum, mint, sugar cane syrup, lime and soda.
Michelina Cubana - Mexican beer mixed with tabasco, worcestershire and lime.

Aguacate - avocado, shrimp, hearts of palm, red onion and a vinaigrette.  Basically a form of ceviche to be served on homemade tortilla crisps.  Chris ate ceviche almost every day.  Seriously, the seafood was so fresh and so clean (like the Outkast song).

Enchiladas de langosta:  Lobster enchiladas with an ancho chipotle sauce.

Chile Rellenos.  Three cheese stuffed peppers in a black bean sauce with mango pico de gallo.  We hardly ate any meat on this trip.

The best part:  Churros with caramel sauce and chocolate sauce.  These babies were fresh out of the fryer.  Hot, doughy and sugary.  I asked Chris the other night after dinner if he was frying up churros for dessert, unfortunately he wasn't.

Chocolate cake with tequila cream ice cream.

Weather-wise, it was low to mid 70's during the day which was perfect, as not too hot.  Although not hot enough for me to take advantage of the pools at our resort.  I only got in the water fully one time and I didn't even get my head wet!  Because Cabo is centered where the Pacific Ocean meets the Sea of Cortez, the waters can get a bit rough, so you definitely can't swim in the Pacific due to the undertow and while we were there, you couldn't really swim much on the Medano Beach side either.  That was okay though because we still got a lot of beach time regardless.

At night, it definitely cooled down and you needed pants and a jacket.  Thankfully the sister resort that we were staying at had a firepit to help warm us up one night.

 Part Two to follow.
